Peanut Butter and Jelly Cookies

My cousin and I were shoping and saw these wonderful looking cookies...she said, "I bet we could make those" And so we did! :D
We used a basic thumbprint cookie recipe and made up the peanut butter stuff :)

2+ C ww pastry flour
1/2 t. baking powder
1 C butter
1/2 natural sugar
*
1 egg
1 t. vanilla
Jam or Jelly
**

1/4+ C peanut butter
1 T+ milk
1 T+ honey

( + means a generous measurement - so just a little over the amount given )

Mix flour and baking powder together. Cream better and sugar until light and fluffy. Add egg and vanilla. Add flour and mix well. Form dough into balls about the size of a walnut. Press thumbprint in each ball and fill each print with jam. Mix together peanut butter, milk and honey until smooth. Spoon into a frosting bag Zig-zag and S pattern on top of each cookie and bake @ 350 for 8-10 min. Cool on a wire rack. Yield about 35. Enjoy!

* I use "honey sucanat" - a lighter sucanat w/o the molasses flavor )

**( I like strawberry :) apricot and grape are also good - but the grape jelly I used ran :P - so think maybe jam works better than jelly cause there is more body to it...? )

~ You can make your own frosting bag out of a piece of paper or you can use a sandwich bag and cut the corner for the tip :) just don't squeeze too hard - cause I've had the bottom of the bag pop on me! :P
~And do not fear! the peanut better doesn't melt! :D When we first made them at my cousins house I put some corn syrup in the peanut butter mix to make it stick together nicely - but at home, course we don't have the deadly stuff ;D he eh, and it works just fine without it. However, if you've a mind to - the ones with the corn syrup ( pictured ) seemed to hold their shape a little better...
